What is Goan Cuisine?

Goan cooking is defined by its use of coconut - coconut milk, grated coconut, and coconut vinegar appear throughout the cuisine. The spice profile is distinctively aromatic: Kashmiri chillies for colour and mild heat, cumin, coriander, turmeric, and the essential Goan ingredient, kokum. The Portuguese colonial period introduced vinegar-based marinades, giving dishes like Vindaloo (originally "vinha d'alhos", wine and garlic) their unique tartness.

  • Chicken Xacuti - the jewel of Goan cuisine. Slow-cooked in a complex sauce of toasted spices, coconut, and Kashmiri chillies

  • Prawn Balchão - a fiery, vinegar-marinated prawn pickle-style curry, unique to Goa
  • Beef Vindaloo - the authentic Goan original: tangy, spiced, slow-cooked
  • Goan Vegetable Curry - seasonal vegetables in a light coconut and kokum broth

Goan Food in the UK

Authentic Goan cuisine is genuinely rare in the UK. Most Indian restaurants serve North Indian or Punjabi-influenced dishes; the coastal cuisines of Goa, Kerala, and the Konkan coast remain largely unknown.
